Coffee and chocolate, rolled into something you can grab on the way out the door. These no-bake balls come together in one bowl, no oven, no fuss, just oats, nut butter, a hit of cooled espresso, and two servings of EarthChamp Vanilla folded through the batch. Roll them Sunday, they'll still be good Friday.

Ingredients

  • 1 cup oats (use certified gluten-free oats if you need them)
  • 2 scoops (70g) EarthChamp Vanilla
  • 1 tsp ground cinnamon
  • 3 tbsp nut butter (sunflower seed butter works if you're avoiding nuts)
  • 3 tbsp maple syrup (the original calls for honey, maple keeps it plant-based)
  • 1–2 tbsp cooled espresso (or strong brewed coffee, cooled)

For the coating:

  • 2 tbsp dark cocoa powder
  • 1 tsp finely ground coffee

Instructions

  1. Tip the oats, EarthChamp Vanilla and cinnamon into a bowl and give them a quick stir.
  2. Add the nut butter, maple syrup and 1 tbsp of the cooled espresso. Mix until it comes together into a soft dough, add the second tbsp of espresso only if it's looking dry.
  3. Roll into 10 balls, about a heaped tablespoon each.
  4. Stir the cocoa powder and ground coffee together on a small plate, then roll each ball through until coated.
  5. Chill in the fridge for 30 mins to firm up. Keep them in an airtight container — they'll last the week.

Made a batch? We'd LOVE to see them!! ☕
